I saw this article on homemade vinegar on the Washington Post website. It sounds intriguing. I did a Google search, and there are a lot of differing opinions on homemade vinegar, including whether to use fruity wines like Cabs or not. A disagreement over the main ingredient would seem to me to be a major point of contention, which tells me that it's really easy to do and get good results, you just have to pay attention to your own likes and dislikes.
